The 2020 La Servil comes from two plots of very old ungrafted vines planted with a Monastrell-based field blend that contains around 5% Moravia Agria, Forcallat, Blanquilla and Rojal at close to 1,000 meters in altitude on limestone soils. It's a large vineyard, almost 12 hectares, some of it still being recovered and other parts used for the traditional range from the family winery. The vines are farmed organically, and they are in the process of certifying their biodynamic work too. The wine is ripe but not alcoholic (15.03%), juicy and Mediterranean with freshness and a low pH (3.36) and six grams of acidity. It feels very balanced and medium-bodied, keeping the crunchiness and with a chalky sensation even on the nose. The palate is very subtle, serious and harmonious, not fruit-driven, nicely textured, with fine-grained chalky tannins and a long dry finish. A very elegant Mediterranean Monastrell. It fermented with some 20% full clusters and had a long 50- to 55-day maceration, like an infusion, and matured in foudre and used barriques for 10 months. 9,400 bottles and 300 magnums were filled in November 2021.
