The 2019 Los Loros Albillo Criollo was produced with grapes from a vineyard Pérez planted in 2008 at 850 meters above sea level on clay-rich soils that he has farmed organically since the beginning, but the vineyard does not carry the certification. The grapes had a 24-hour cold soak and were then pressed and fermented with indigenous yeasts. It was kept in stainless steel with lees that were not stirred for 14 months. It is expressive, open and aromatic, with a distinct nose that mixes notes of flowers and pollen with a meaty undertone and citrus freshness. It's very clean, medium-bodied and with moderate alcohol, 12%. It's focused, pure and tasty. 900 bottles were filled in December 2020.
