"The 2016 Trenzado, named after the peculiar training system used in La Orotava, where the branches form a braid (trenzado means braided), is from the same vineyards as the 2015, but it was picked a little earlier and the fermentation was in stainless steel and used 500-liter oak barrels plus one new 4,500-liter oak foudre, except for one of the six vineyards, which fermented in stainless steel and matured in concrete exclusively. The different lots matured in their fermentation vessels for nine months. The new oak is completely unnoticeable, and the wine felt vibrant and very much alive, still young and undeveloped in the nose, with a Chablis-like minerality and clarity. The saline and mineral sensation is very clear. 2015 is a little more exotic, and I feel 2016 is purer. 17,000 bottles produced".
