The Wine Advocate:

The NV Tío Pepe Fino en Rama 2022 wears a green label to make it easily recognizable next to other bottlings. This is selected and bottled around March/April every year. Tasted next to the previous year's bottling, this feels young and a bit creamy and mellow ("mantecoso" is the word they use in Spanish). It has a pale golden color, slightly hazy, as it's unfined and unfiltered, taking you to the wine as close as possible as it is in the bota. It has nutty aromas, hints of brine and dry hay, with hints of yeasts and a citrus twist. The palate is bone dry with a delicate mouthfeel but with pungent, tasty flavors. It finishes dry and with a chalky sensation.

Sherry aficionados eagerly await the annual spring release of en rama Sherries, as the category showcases Sherry in its raw, freshly released state, unfined and with minimal filtration, and usually produced in small quantities. Gonzales Byass's regular Tio Pepe fino bottling is a blend of many butts to create a consistent house style, whereas the en rama blends selected butts, chosen to reflect vineyard character. Offering a great aromatic intensity, this is fresh, saline, tangy and crisp, with a deeply yeasty character, and it goes on forever in the mouth. Enjoy it with jamon Iberico – a simple and heavenly pairing! The half-bottle is a great entry point, but you can also buy by 75cl bottle.

Zingy, rich nose that’s full of yellow apples, white almonds, biscuits and sour dough. Creamy, round and flavorful with a rich but supple palate. Long and creamy with lots of salted almonds and a briny accent. Vegan. Bottled on 3/23/2022. Drink now.
