Dolce, elegante, affascinante. Viña Corrales è la prima creazione di Peter Sisseck e Carlos del Río, nella zona di Jerez. Viene da Balbaina Alta e questo vino è fatto con un processo biologico. Bisogna dargli tempo e spazio per aprirsi ed esprimersi come si deve. Perfetto con gamberoni di Sanlúcar e prosciutto iberico

The finesse and intensity to this are very impressive, with a salt, honey, cedar, almond and dried lemon character. The depth and complexity are fantastic. Spicy and minerally with a chalky touch. Very long and complete finish. Best ever. April 2024 bottling. Drink now.

The Wine Advocate:

The NV Fino Viña Corrales Pago Balbaína was bottled in the spring of 2023, as they try to bottle in the spring when the flor is more active. They have realized that the wine has a lot of influence from the weather of the year, and 2023 was a warm year. This is closer to the 2021 bottling than the 2022. It's creamy, vinous, round and lush. They are now refilling the barrels with wine from their own vineyards, and the third criadera is almost 100% from their own vineyard. This is very tasty, almost salty and with a marked bitter twist in the finish, briny, with reminiscences of green olives and esparto grass. They filled some 8,900 bottles, which is more or less what they want to bottle to keep the average age and the character of the wine.
