San Cayetano is the highest plot they have in Macharnudo, which produced the 2022 San Cayetano. It's a south-facing plot planted 40 years ago (the De La Riva one comes from a north-facing exposition) on very calcareous soils that are low in organic matter and worked with mulching. Because 2022 was very warm, they didn't sun dry the grapes, which were pressed in a small vertical press and the juice put to ferment in 60-year-old botas that were only half filled. The flor grew very quickly and covered the wine for some 18 months, a very intense flor because of the concentration of the wine. The wine has big bones; the year was powerful but the intense flor sharpened and took away all the weight from the wine, which has no sweetness at all and feels very Jura. The nose is an explosion of curry, green walnuts, morels and hints of cheese rind and a hint of petrol. It has an amazing palate, pungent and piquant. It was bottled unfined and unfiltered with 13.5% alcohol and 5.9 grams of acidity. It's effervescent and salty. This has a lot of flor and a lot of character and is completely different from the rest of the unfortified whites. Amazing wine! Only 440 bottles produced. It was bottled in February 2024.
