The organic Tenuta delle Terre Nere 2023 Etna Bianco Calderara Sottana is extremely pretty and bright with tightrope aromas of crushed mineral, white citrus and unripe peach. However, the wine has the textural strength and depth to pair with shellfish or white meat. A slat-baked whole fish with fresh herbs comes to mind.
