I tasted the 2020 Viña El Corregidor de Carrascal sparkling white next to the 2019, which had been disgorged for a couple of months. 2020 was a low-yielding year, a little less than the average 600 liters (500). As in the previous year, the wine fermented in stainless steel and matured in bota with flor for one year and then was put to referment in bottle with concentrated Pedro Ximénez. The wine matured in bottle with lees for three years. It's a Brut Nature, with no dosage, 12% alcohol and 6.38 grams of acidity, a little drier than the 2019, with only two grams of residual sugar. There's more kick here; the wine is livelier and the bubbles smaller and better integrated. There are pristine notes of curry and esparto grass, and there's a lot more finesse and elegance. It has a velvety texture from the abundant, fine bubbles. 4,000 bottles produced. It was disgorged in July 2024.

A saline sparkling from Jerez from palomino fino. Iodine and sourdough bread with a steely touch. Yeasty on the palate with a lightly pulpy sensation in the middle, where you find more grape flesh. Fresh, tangy and more generous in the finish. Liqueur d' expedition with pedro ximenez. Three years on the lees in the bottle. Drink now.
