Descrizione

Coupage navarro composto dalle varietà Merlot e Cabernet sauvignon provenienti dal Pago de Otazu, che ha una denominazione di origine protetta propria. Dopo un invecchiamento combinato in botti nuove e usate, ci troviamo di fronte a un rosso di grande complessità, con un passaggio lungo e piacevole in bocca e aromi intensi di frutta rossa e sentori minerali e speziati.

Vista
Rosso ciliegia, tonalità intensa, molto brillante.
Profumo
Complesso, con un sacco di frutta rossa e nera, tipo ribes e more, che poi lascia spazio a note tostate e speziate super eleganti.
Bocca
Entrata morbida e percorso vellutato e complesso. Fresco, equilibrato e persistente.
Temperatura di servizio
16 °C.
Abbinamento
Paté e formaggi, piatti a base di selvaggina: fagiano e pernice, carni alla brace e maialino da latte.

Vigna e preparazione

Raccolto
Vendemmia manuale in cassette da 12 kg.
Vinificazione
Criomacerazione per 7 giorni a 5 °C prima della fermentazione alcolica, che si svolge in piccoli serbatoi di cemento da 40 ettolitri, seguita da una fermentazione malolattica in botti di rovere francese.
Invecchiamento
18 mesi in botti di rovere francese.

The 2022 Pago de Otazu has more Merlot and less Cabernet Sauvignon than the 2021 I tasted next to it, approximately a proportion of 61/39. They are evolving in their viticulture and knowledge of their soils, removing herbicides and working toward the improvement of the quality of their wines while also reducing volumes. This has 14.5% alcohol with good freshness showcased by a lower pH of 3.42. They were able to extract floral aromas from the Merlot, which is quite remarkable, and the ripeness feels more balanced. The wine is juicy and the oak is neatly integrated and folded into the wine. They have lowered the time in barrel of the different lots, and it shows. It has the black pepper spiciness the grapes are capable of, and it's tasty, balanced and elegant, an amazing value for money. Like the white, this has to be the finest year of this cuvée so far. 23,520 bottles produced. It was bottled in June 2024.
