The paler and more delicate red 2021 Toxo Villa de San Clemente was produced with a field blend of 94% Mencía and 6% Merenzao (Trousseau) regrafted on the white plants from a vineyard that is 84 years old and belongs to her neighbors in the village where she lives. It has a moderate 13% alcohol and a medium-bodied palate. It fermented with 30% full clusters and matured in used 225-liter barrels for eight months. It's kind of wild, with character and a tender palate, textured with very fine tannins. 1,231 bottles were filled in February 2023.

Aromas of dark cherries and crushed rocks accented by a subtle hint of licorice. The palate is medium- to full-bodied, offering a savory profile with supple tannins and precise acidity. The wine is well structured and balanced. A blend of 96% mencia and 4% merenzao. Fermented with 30% whole clusters. 80-year-old head-pruned vineyard. Drink or hold.

This wine is from a single parcel of 80 year old Mencía (94%) and Merenzao (6%) in San Clemente, north of Cacabelos. It is light in colour with attractive orange, rose and tomato aromas and a bloody, ferrous backbone. 30% whole bunch is used in fermentation which brings just the right amount of green freshness. With precise acidity and purity of fruit, the wine has a morish, sour cherry finish. 2024-26
