Parcella de los Capellanes ha scelto il nome Doroteo, il pioniere della cantina, per il vino con cui hanno festeggiato il loro 25° anniversario. Una produzione super limitata per un rosso fatto con l'uva regina della Ribera del Duero e con 36 mesi di invecchiamento in botte. Al naso si sente un sacco di frutta nera cotta, con note di spezie dolci e balsamiche e un gusto rotondo e voluttuoso

Profumo
Aromi di spezie dolci e frutta nera cotta. Agitando il calice si sentono note balsamiche.

Le cantine pensa che questo vino abbia un buon potenziale di invecchiamento. Tra il 2027 e il 2035, se conservato bene.

Vinificazione
Macerazione pre-fermentativa di 6 giorni a meno di 12 °C. Aggiunta di lieviti autoctoni, fermentazione in tini di rovere francese a temperatura controllata con rimontaggi regolari. Fermentazione malolattica spontanea in botti di rovere francese a bassa temperatura con rimestamento dei lieviti.
Invecchiamento
Invecchiamento di 36 mesi in botti di rovere francese a grana extra fine.

Decanter:

Last year we welcomed our first Ribera del Duero to the top 50 … and it was white. This year sweeps us back to the original inspiration for the post-1980 explosion in plantings on Spain’s Duero: deep, dark Tempranillo-based red grown at altitude, and packed with an energy and force which clearly contrasts with the softer, more reposeful pleasures of classical Rioja. This wine is an opaque black-red in the glass, with aromas in which its 27 months in oak can be discerned. For all that, it’s the fruit – sombre, driving, insistent – that’s on the front foot, with just a little tobacco and leather beginning to point the way to bottle-evolution. It’s big in the mouth – but not wide or fat; that altitude brings instead a kind of aerial urgency. The quickening acidity plays as much a structuring role in the wine as does its relatively light, graceful tannins. A long, tenacious finish suggests older-vine fruit.

James Suckling:

A very good wine with aromas of black pepper, ripe but fresh blackberries, mussel shells, graphite, roasted spices and cigar box. Pretty full-bodied on the palate, with tight, round, fine-grained tannins. Long and structured. Drink from 2026.

Doroteo Romero was the founder of what is now Pago de los Capellanes and this superb wine from a 1.5-hectare, 103-year-old parcel in Pedrosa de Duero is a tribute to him. Showing plenty of old-vine concentration, it's also fresher and more restrained than some of its stablemates, with stylish 25% new oak integration, granular tannins, plum, red cherry and blueberry fruit flavours and a lingering finish. 2027-35
