Vendemmia manuale nelle prime ore del mattino, quando le temperature sono più fresche.
Vinificazione
La fermentazione avviene a 14 °C e dura circa 30 giorni. Riposo di sei mesi sui propri lieviti. Filtrazione fine prima della seconda fermentazione in bottiglia.
Invecchiamento
Invecchiamento minimo di 9 anni.

The 2014 Brut Nature Maria Bernet fermented for 30 days and was left to rest for six months with the lees, then put to referment in bottle, where it matured for a long time, 132 months (11 years!), even though the label reads 120 months. The color remains a bright yellow with even some green tints, and the nose is clean, elegant and complex, with citrus freshness, notes of Mediterranean herbs and a touch of camphor and diesel; it's subtle, complex and wonderful. The wines here always have some weight and density and are vinous, with ripeness and complex aromas and flavors. The toasty notes feel a lot more integrated, and the wine still has refreshing acidity (pH 3.09). Only 564 bottles produced.
