We tasted some back vintages, like the 2016 La Fleur, their take on biological aging, which they like to internally classify as 2 Palmas. 2016 was a warm year greatly marked by the eastern warm wind Levante, so the grapes achieved good ripeness. Furthermore, they were sun-dried, which concentrated everything—sugar, aromas and also acids—so the wine is a lot more concentrated. It fermented in 500- and 600-liter botas and matured in those Sherry casks with flor for three years and six months. It has 15% natural alcohol and a pH of 3.5. It has an explosive nose, closer to a Manzanilla than a Fino, with some evolution, really nuanced, with a magnetic attraction, developing more layers of aromas and further complexity with time in the glass. It's pungent and powerful, persistent but also terribly balanced and elegant and, even if it might sound contradictory, an ethereal side. 1,610 half-liter bottles were filled in December 2022. They still have two casks of this that they will release as 3 Palmas, when the wine has at least eight years of flor. - Luis Gutiérrez.
