The Wine Advocate:
The incredibly-priced NV Amontillado Fossi is currently refreshed with wine from vines that today are 19 years old, from albariza chalky soils very close to the sea. This wine aged under flor for seven years and a further 10 years in topped up barrels. It has a sweet nose that resembles a young-ish Palo Cortado, with notes of wood and some varnish and an intense palate and pungent flavors lifted by the alcohol. This is a real bargain; a young-ish, approachable Amontillado. - Luis Gutiérrez.

Primitivo Collantes es un maestro en el conocimiento del Marco de Jerez y eso que es relativamente joven. Desde Chiclana de la Frontera está elaborando unos vinos extraordinarios y alcance de todos.
Tremendo, fino, salino, alcohol integradísimo. La botella se acaba rápido y eso es alegría!! Por este precio es muy recomendable.
Para cocinar , muy flojito.
